Ingredients

400g Self Raising Flour

1 tsp Baking Powder

100g of Softened Unsalted Butter

100g Raisins
-
100g Caster Sugar

340g of Llaeth Y Llan Kefir

10g of Llaeth y Llan Kefir (for Glazing)

2 tbsp of Milk

To serve – Welsh Lady Strawberry Jam and Whipped Double Cream!
Instructions

Preheat the oven to 200oC.

Add the flour and baking powder into a large mixing bowl.

Add the sugar and raisins and mix to incorporate.

Place the butter in the bowl and use your fingertips to create fine breadcrumbs. Raise the crumbs high in the bowl to aerate the mixture.

Add Llaeth Y Llan Kefir to the mixture and mix well until incorporated.

Place the mixture on an even worksurface and roll out – either with a rolling pin or with your hands – use a cutter to cut out the scone shapes.

Place your scones on a baking tray with baking paper. Mix together 10g of kefir and 2 tbsp of milk and glaze the tops of the scones with a brush.

Bake in the oven for 16 minutes.

Enjoy with some Welsh Lady Strawberry Jam and whipped double cream!
