Easy Vegetable Yogurt Curry

Transform your leftovers into a delicious and healthy meal with this easy vegetable curry recipe.


  • Leftover Vegetable and Potatoes
  • 1 Onion (finely chopped)
  • 1 Tin Chopped Tomatoes
  • 300ml Vegetable Stock
  • 100g Llaeth y Llan Greek Style Natural Yogurt
  • 1 tbsp Medium/Hot Curry Powder
  • 3 tbsp Vegetable Oil


  1. Heat the oil in a large frying pan, add the onions and cook over a medium heat for 8 mins or until lightly browned. Sprinkle over the curry powder and cook for another 30 seconds whilst stirring.
  2. Add the chopped tomatoes and cook for a further 2-3 mins. After this add the vegetable stock and bring to a gentle simmer.
  3. Add the vegetables/potatoes and simmer for around 5 mins.
  4. Once done, mix in the yogurt and serve on top of rice.
