Transform your leftovers into a delicious and healthy meal with this easy vegetable curry recipe.
Ingredients
- Leftover Vegetable and Potatoes
- 1 Onion (finely chopped)
- 1 Tin Chopped Tomatoes
- 300ml Vegetable Stock
- 100g Llaeth y Llan Greek Style Natural Yogurt
- 1 tbsp Medium/Hot Curry Powder
- 3 tbsp Vegetable Oil
Instructions
- Heat the oil in a large frying pan, add the onions and cook over a medium heat for 8 mins or until lightly browned. Sprinkle over the curry powder and cook for another 30 seconds whilst stirring.
- Add the chopped tomatoes and cook for a further 2-3 mins. After this add the vegetable stock and bring to a gentle simmer.
- Add the vegetables/potatoes and simmer for around 5 mins.
- Once done, mix in the yogurt and serve on top of rice.
