Ingredients
Tzatziki Sauce
- 1 x 125g Llaeth y Llan Natural Yogurt
- 1 Cucumber (peeked and grated)
- 1/4 tsp Salt
- 2 tbsp Lemon Juice
- 1 Garlic Clove (minced)
- Fresh Dill
Wraps
- 1 Cucumber (peeled & diced)
- 1 Red Bell Pepper (diced)
- Cherry Tomatoes (halved)
- Red Onion (peeled & thinly sliced)
- Feta Cheese (crumbled)
- Kalamata Olives (coarsely chopped)
- Lettuce (if desired)
- 4 Large Tortilla Wraps
- (optional) – Diced Chicken Breasts
Instructions
- Add all the ingredients for the sauce to a bowl and stir together until well-mixed. Once done, place this into an airtight container and refrigerate for at least an hour to allow the flavours to meld.
- In another large bowl, gently toss together the cucumbers, bell peppers, cherry tomatoes, onions, and olives. Then stir in the feta and Tzatziki sauce.
- Lay a tortilla flat and line the middle with a few lettuce leaves. Then add some of the Greek salad filling to the middle. If using Chicken Breast, add this on top of the filling too.
- Roll the tortilla tightly and tuck in the ends. Then slice in half and serve.
