Apple Pie Yogurt Parfait

Need a delicious, refreshing break from all the winter foods? Try this Apple Pie Yogurt Parfait!

Ingredients

Cinnamon Apples

  • 3 x Apples (peeled and chopped)
  • 2 tsp Lemon Juice
  • 4 tbsp Light Brown Sugar
  • 2 tsp Ground Cinnamon
  • Dash of Nutmeg

Cinnamon Greek Yogurt

  • 200g Llaeth Y Llan Fat Free Natural Greek Style Yogurt
  • 2 tbsp Honey
  • 1 tsp Ground Cinnamon

Pouring Sauce

  • 200g Llaeth Y Llan Toffee Yogurt

Cookie Crumb

  • 60g Biscuit Crumb (Biscoff or Ginger Nut)

Instructions

  1. In a microwave-safe bowl, combine the apples with the sugar, cinnamon, nutmeg and lemon juice. Microwave for 2 and a half minutes or until the apples are tender. Set aside to cool.
  2. In a small bowl, mix the natural yogurt, honey and cinnamon together. Set this aside.
  3. Put the biscuits in a food processor and pulse until finely ground.
  4. Layer the parfaits, starting with 2 tbsps of the yogurt mixture, then a layer of the apple mixture, drizzle some of the toffee yogurt on top of this, then sprinkle with the biscuit crumbs. Repeat this until you have enough to serve.
  5. Serve immediately or loosely cover and chill until ready to serve.
