Autumn is a beautiful time of year. The leaves are changing colour, and the air is crisp. It’s also a time of year when you can find wonderful seasonal vegetables in your local farmer’s markets and grocery stores. We’ve put together a recipe that uses roasted vegetables as the base for a healthy, seasonal dinner. We feel like this kind of meal is perfect for autumn: it feels cozy, but it doesn’t have to be overly heavy or hard to prepare.
Roasted vegetables are a great way to go when you’re trying to eat healthy—they’re packed with nutrients like vitamins A and C and potassium—and they’re also really easy to make! Just throw some veggies on a baking tray with some olive oil, salt, pepper, and whatever herbs or spices you like, then roast them until they’re soft and tender. That’s it!
The yogurt coriander dip is super simple too: just mix our Llaeth Y Llan Natural or Fat-Free Natural 450g yogurt pot with finely chopped coriander and some lemon juice until everything is combined well. You can serve this dish warm or cold—either way will taste amazing!
